This credential is not optional—Texas law requires that every licensed food establishment have at least one Certified Food Protection Manager (CFPM) on staff. Certification can be earned by successfully completing an exam recognized either by the Texas Department of State Health Services (DSHS) or the ANSI National Accreditation Board (ANAB) in partnership with the Conference for Food Protection (CFP).
Yes. Under Texas Administrative Code, Title 25, Rule §228.33, at least one person with supervisory responsibility must hold a Food Protection Manager Certification. Unlike employee food handler training (required for all staff), the CFPM credential is specifically intended for managers and supervisory staff.
AAA Food Handler makes the process straightforward:
The Texas DSHS exam is recognized statewide but limited to Texas. The ANAB-accredited CFPM credential is portable and accepted nationwide, giving managers flexibility if they relocate or work across multiple states.
In Texas, both the DSHS and ANAB-CFP Food Manager Certifications remain valid for five years. After expiration, managers must retake and pass the approved exam to renew their credential. Collin County inspections require the certificate to be up-to-date and visible.
Yes. AAA Food Handler delivers the exam through a secure online proctoring system. Exams meet the standards of the ANSI National Accreditation Board (ANAB) and Conference for Food Protection (CFP), ensuring that Collin County managers receive nationally accredited recognition.
Certification is expected for anyone in control of food operations—owners, executive chefs, kitchen directors, and shift supervisors. Beyond legal requirements, many employers mandate nationally accredited CFPM credentials for leadership staff because they represent the highest level of food safety assurance.
Collin Food Manager Certification are tasked with more than compliance. Their duties include:
By holding managers accountable, foodborne illnesses can be reduced significantly. Data shows that illnesses caused by Norovirus and Salmonella remain two of the most frequent risks in Texas, and both are preventable when certified leaders enforce proper safeguards.

Sure, it wasn’t the best training of my life, but it wasn’t bad.
after tacking the classes, you realize how much you really did not know and all the hidden dangers in a kitchen . learning how care and safely serve people gives me more confidence in success everything has been easy and well explained.
Very easy training sessions that walk you through each module, and the tests in the middle are very helpful to prepare for the exam.
My overall review to the course is I like how they gave us mini quizzes while watching the video because I’m more of a hands-on learner so practicing my brain in between videos helped me. There was a lot to learn but I do feel like they put too much in module two of the module directory.
It is a great training and covered everything.
