  • Coverage Requirement: While the QFO isn’t required to be on-site for more than 30 operating hours per week, the owner or operator must appoint an alternate person in charge to oversee food safety whenever the QFO is absent.
  • Alternate Responsibilities: The designated alternate must document their food safety knowledge and fulfill specific duties to maintain compliance.
