Connecticut Food Manager Certification is an ANSI National Accreditation Board (ANAB) accredited program designed for individuals responsible for food safety in higher-risk food establishments.
Connecticut adopts the 2022 FDA Model Food Code, and state law requires that every Class 1, 2, 3, and 4 establishment have a qualified Person in Charge (PIC) on-site at all times.
At least one employee must hold a Certified Food Protection Manager (CFPM) credential.

Connecticut requires a Certified Food Protection Manager for Class 3 and Class 4 establishments. One designated CFPM must be listed, and an alternate PIC must be appointed during non-peak hours.
AAA Food Handler provides a ANAB CFP-Accredited Food Manager exam accepted throughout Connecticut under the Connecticut Public Health Code.
Only ANAB CFP-accredited exams are accepted in the state, and the certification is valid for five years.
Connecticut does not permit bare-hand contact, and latex gloves are banned statewide. HACCP plans are required for specialized processes such as ROP and acidified rice/sushi.
Hot holding must be at 135°F; cold holding at 41°F; comminuted meats must reach 155°F for 15 seconds.
