Regulatory Overview & State Requirements

In Illinois, food manager certification is governed by the Illinois Department of Public Health (IDPH) under the adopted 2022 edition of the FDA Model Food Code. Illinois requires that food establishments operate under the supervision of at least one Certified Food Protection Manager (CFPM).

Key Regulatory Requirements (Statewide):

  • Certification Required: Yes
  • Who Must Be Certified: At least one CFPM per establishment on duty during food preparation and service.
  • Training Hours Required: Minimum 8 hours inclusive of exam (Illinois law)
  • Recertification Required: Yes — 8 hours of training and exam for renewal before expiration.
  • Certification Expiration: Valid for 5 years.
  • HACCP Requirements: Applicable for certain processes (ROP, acidified rice/sushi, smoking/curing meat).
  • Bare Hand Contact: Not allowed with ready‑to‑eat foods without variance.
  • Temperature Controls: Hot holding 135°F, cold holding 41°F, comminuted meat 155°F for 15 seconds.
  • Effective Jan 1, 2018: Illinois no longer issues new Illinois Food Service Sanitation Manager Certification (FSSMC); CFPM from ANAB‑CFP accredited providers satisfies regulatory requirements statewide.

Section Summary: Illinois requires certified food managers under the state food safety code, with recognized accreditation, defined training hours, and standard food safety parameters.

I highly recommend that you take this course. The videos are short and to the point while also being very informative. The end of the lesson review quizzes are short and multiple choice, detailed without being overwhelming. The information in general is easy to follow and understand. I’ve already did the Food Handler, Responsible Alcohol Server and Allergen Certifications through here and I’ve passed all with two at 95% and one at 100% that’s how easy and knowledgeable the courses are.
