In New Hampshire, food establishments must have a Certified Food Protection Manager (CFPM) on-site whenever food is being prepared, with certain exemptions outlined under He-P 2303.02(a).

To earn CFPM status, individuals must complete a food protection program accredited by ANSI-CFP, such as the training offered by AAA Food Handler.

While most food establishments are regulated by NH DHHS, some self-inspecting cities and towns enforce their own food protection rules. These municipalities—like Bedford, Concord, Dover, Manchester, Nashua, Portsmouth, and several others—may have different CFPM requirements or approved training providers. If you work in one of these areas, it’s important to check with your local health department to confirm which programs are accepted.


You must pass a Food Protection Manager Certification exam accredited by the ANAB. The New Hampshire Food Code requires a CFPM to be on duty whenever food is prepared.

Allergen training teaches safe handling of the nine major allergens—milk, eggs, peanuts, tree nuts, fish, shellfish, soy, wheat, and sesame. It helps protect customers and ensures staff can respond in emergencies.
