Yes, most of the state requires food handler training under New Mexico Administrative Code (NMAC) § 7.6.2-104.11. Food employees must complete an approved course and pass the exam within 30 days of being hired. The only exception is Albuquerque/Bernalillo County, where training isn’t legally required—though many employers there still prefer certified workers and may even give them priority when hiring.

New Mexico Food Safety

The process is simple. Enroll in the AAA Food Handler’s online course, complete the training, pass the exam, and instantly download your New Mexico food handler certificate. Employers are required to keep a copy of your certificate on file, so you should provide one and keep another for your own records.

A food handler certificate in New Mexico is valid for three years. Once it expires, you must renew your training to remain compliant with Food protection requirements.

Foodborne illness is a serious concern in New Mexico. Between 2003 and 2012, the Center for Science in the Public Interest recorded 36 outbreaks in the state, most often linked to pathogens such as Salmonella and Clostridium—both of which can be reduced with proper food safety practices.

Because managers play a central role in overseeing safe operations, New Mexico requires them to hold certification from an ANSI accredited Food Protection Manager program. This credential demonstrates that a manager has the knowledge and skills to prevent outbreaks and maintain safe Food protection practices.

ANSI accredited programs meet nationally recognized food safety standards and are endorsed by the CDC and FDA, ensuring managers are trained to the highest level of industry expectations.

To become a Certified Food Protection Manager, you must pass a Food Protection Manager Certification exam accredited by the ANAB and recognized by the Conference for Food Protection (CFP). AAA Food Handler provides an ANAB accredited program accepted across New Mexico.

The New Mexico Environment Department (NMED) requires each food establishment to have at least one Certified Food Protection Manager (CFPM). This individual must earn certification through an ANAB Accredited program that follows Conference for Food Protection (CFP) standards.

The Food Protection Manager Certification is generally valid for five years in New Mexico. Renewal is required to stay in compliance and to ensure food managers remain updated on Food protection practices.
