  • CFPM certification is required in the following counties: Bottineau, Burke, McHenry, McLean, Renville, Sheridan, and Ward.
  • One Person in Charge (PIC) must be certified per shift in counties with CFPM requirements.
  • CFPM certification is valid for 5 years in these counties.
  • HACCP plans are required for specialized or variance-based processes.
  • Bare-hand contact with ready-to-eat foods is allowed only with minimum handling and approved controls.
  • Food Temperatures:
    • Hot holding: 135°F
    • Cold holding: 41°F
    • Comminuted meat: 145°F (3 min), 150°F (1 min), 155°F (15 sec), 158°F (1 sec)
