Ohio follows the 2022 FDA Model Food Code, enforced at the state and local level.

Key Rules:

  • CFPM certification is required for risk level III and IV food service operations and retail food establishments.
  • At least one CFPM per establishment must be designated as Person in Charge (PIC).
  • HACCP plans are required for specialized or variance-based processes, including ROP, acidified rice, and sushi.
  • Bare-hand contact with ready-to-eat foods is not allowed without an approved variance. Latex gloves are banned in food establishments.
  • Food Temperatures:
    • Hot holding: 135°F
    • Cold holding: 41°F
    • Comminuted meat: 155°F for 15 seconds

Yes. Both the training and the Food Protection Manager Certification exam are 100% online. The training is self-paced, and the exam is proctored remotely using a webcam and microphone.

The course includes training on essential food safety concepts such as hygiene practices, time and temperature control, preventing cross-contamination, cleaning and sanitizing procedures, allergen management, and compliance with Ohio’s food code. It prepares you for the ANAB-CFP Accredited exam.

Your Ohio Food Manager Certification remains valid for five years from the date of passing the exam. Renewal is required to remain in compliance with Ohio’s food safety regulations.

Suppose you choose the Diamond Package and complete all training modules and practice exams. In that case, you are eligible for one free retake of the Food Protection Manager Certification exam within six months of your first attempt. Additional retakes may be purchased separately.

I just finished the Food Manager course and found it incredibly straightforward. The section on FAT TOM and the BIG 9 allergens was broken down in a way that actually makes sense for a busy kitchen environment. It focuses on real world risks, like why can’t you just ‘cook out’ toxins. Great for anyone needing their certification without the fluff.

good servsafe alternative

After having completed the servsafe food manager training in person years ago and needing another course for licensing in the state of MN, I choose AAA and the course took less than half the time as being in person. This covers the same stuff as servsafe although in slightly less depth. This is totally fine if you’re in the industry and looking to get this taken care of quickly because you already know all this material. There is quite literally nothing new here aside from the shininess and expiration date of your updated certification.

Although signing in was difficult But, once I signed in it was fairly easy to follow along. Although the website is kind of corky it would not recognize my password unless I put it is 4x’s. I do suggest you purchase the Diamond course. I like having the practice test with sample questions and unlimited access. I trust I will pass the test.

The course is wonderful and it has the greatest feature of all-the ability to speed up the lessons so you can watch it at 1.25, 1.5, 1.75, and 2x the normal speed.

The course is informative but didn’t get bogged down by unnecessary information.

There is something that I found incorrect, however.

Review section 2 had a question about parasites. You don’t cover parasites in the course until after that review.
