The public health department of King County in Washington reported on June 9, 2021, that 13 individuals who had eaten at a specific restaurant were afflicted with norovirus, a type of foodborne illness. According to Medical News Today, norovirus infections can be caused by consuming contaminated food or touching a contaminated surface.

The last inspection of the restaurant before the investigation revealed several unsafe food handling practices that could have prevented the outbreak, such as:

Bad food handling has severe and long-term legal implications, as illustrated by the case of Blue Bell Creameries. The company faced a deadly Listeria outbreak linked to its ice cream in 2015, resulting in a settlement of $19.35 million with the Department of Justice for criminal liability. 

In 2017, shareholders sued the company for misconduct leading to the recall of products. The company settled with them in 2020 for $60 million. In addition, the company is currently facing a lawsuit filed by its insurance carriers in 2021 for failing to maintain sanitary and safe production standards. These actions highlight how negligence in food handling can have significant financial repercussions.

What are Safe Food Handling Practices?

Clean

Food handlers should practice good personal hygiene and sanitation. For example, they should wash their hands using soap and warm water for at least 20 seconds before handling food, after using the bathroom and handling raw meat, poultry, or seafood. In addition, food handlers should always keep their work area and utensils clean and sanitized.

Separate

Food handlers should separate raw meat, poultry, and seafood from ready-to-eat foods like fruits and vegetables and cooked foods. In addition, they should use separate cutting boards, utensils, and containers for raw and cooked foods and ensure they are stored separately to avoid cross-contamination. 

Cook

Food handlers should ensure that the food they prepare is cooked to the appropriate temperature to kill harmful bacteria and ensure it is safe to eat. In addition, they should use a food thermometer to know the internal temperature of poultry, meat, and seafood and ensure it reaches the recommended temperature for each type of food. 

Chill

Food handlers should ensure that perishable foods are stored at the appropriate temperature below 40°F to prevent bacterial growth. In addition, they should promptly refrigerate or freeze food after cooking or purchasing it and ensure the refrigerator is set to the appropriate temperature. They should also monitor the temperature of the refrigerator and freezer and discard any food left out of the refrigerator for more than two hours.

Overall, the training offered was informative. However, there are parts of the testing process which included questions not covered in the specific modules previously viewed (although were covered in later modules). Also, you can’t “rewind” the training during a specific module unless you go to start the module over. This makes it difficult to relisten to important info from that specific module.
