FOOD MANAGER EXAM POLICIES AND PROCEDURES
Certified Food Protection Manager (CFPM) Background
This certification program conforms to all requirements of Standards for Accreditation for Certified Food Protection Manager and is currently accredited by ANAB (ANAB National Accreditation Board) selected by the CFP (Conference for Food Protection). Only programs that are accredited may provide certification. This certification will be valid for 5 years from the date the examinee has passed the certification exam. The certificate is valid as proof that the examinee has passed a certification exam to be a Certified Food Protection Manager (CFPM).
What is our mission statement?
Our mission is to provide a fair and exceptional certification exam to properly qualify food workers who want to obtain a Food Protection Manager certification. Upon certification, the individual will be considered a Certified Food Protection Manager (CFPM) overseeing the safety responsibilities at a food servicing establishment. The presence of a CFPM increases the level of food safety standards through behavior and training of food employees.
What is the purpose of this Food Manager Certification Program?
The purpose is to provide a fair, qualifying certification based on the standards and requirements by the CFP (Conference for Food Protection) for individuals to be a Certified Food Protection Manager (CFPM).
What is the scope of this certification program?
This certification measures the specific set of necessary knowledge and skills to qualify as a Certified Food Protection Manager (CFPM). The certification measures minimal acceptable competency in the following knowledge and skills:
- Communications
- Critical Thinking
- Food Safety Laws and Regulations
- Administration and Other
What is this certification program’s target audience?
This program targets individuals who are seeking certification as a Certified Food Protection Manager (CFPM). These individuals are usually owners, general managers, chefs, and anyone who is the PIC (Person In Charge) at the food establishment.
What laws and mandates guide these programs?
The certification program follows the requirements set forth by ANAB-CFP. This program has been approved and accredited by ANAB (ANAB National Accreditation Board) to provide a qualifying certification exam to individuals who wish to be a certified food protection manager. Only those who have successfully passed the certification exam and have not violated our Examinee Terms and Conditions and/or Examination Rules will receive a certification certificate as proof of certification.
Refund/Cancellation Policy
Refunds and cancellations may be requested within 7 days of purchase. Customers may call or email their requests. Most refunds or cancellations will be provided within 7 days of request if these conditions are met:
- If a course has been purchased, less than 25% of the course has been completed.
- The certification exam was not taken
- No food manager certification certificate was issued
- The examinee did not start or miss a scheduled exam session with a proctor
- The examinee did not violate the Examinee Terms and Conditions or Examination Rules.
General Policy
Potential examinees need to schedule and complete their certification exam within 6 months of purchase date. 1 AAA Food Handler reserves the right to change prices and policies.
Retake Policy
All examinees will be emailed instructions on how to retake a certification exam. The 1 AAA Food Handler certification exam retake charge for the first retake is $69. In the event examinee does not pass on the 2nd attempt, examinees must wait 90 days from their last exam session to apply for another exam session for certification.
Returned Checks
A $25 fee will be charged for returned checks.
Complaints Protocol
The complaints protocol is as follows:
- All complaints must be made in writing. Complainants can email their complaint to support@aaafoodhandler.com with “FORMAL COMPLAINT” in the subject line.
- All written complaints will be reviewed by an employee in customer service and has the authority to solve the matter or can bring it up to their supervisor if needed.
- If the subject of the complaint is an employee of 1 AAA Food Handler, then those individual(s) will not be involved with the response or the resolution of the complaint.
- If a 1 AAA Food Handler employee who is not the subject in the complaint is not available, then the complaint response will be taken by a member of the Advisory Team.
- All complaints will be followed up with an attempt for a resolution within 7 business days. All follow ups will be in writing and sent to the email received.
- If the resolution is acceptable and/or the complainant does not respond within 7 business days, no further action will be taken.
- If the resolution is not acceptable, then the complainant can proceed with an appeal.
Appeals Protocol
The appeals protocol is as follows:
- All appeals must be made in writing. Complainants can email their appeal to support@aaafoodhandler.com
- An appeal will not be assigned to the same individual who answered the original complaint.
- If a 1 AAA Food Handler employee is not available or if a conflict of interest exists, then a member of the Advisory team will be tasked with the appeal review.
- An emailed response will be made within 7 days of the written appeal to the email received.
- Once a decision has been made, the decision is final. There will be no further appeals heard for the original complaint.
Special Accommodations
1 AAA Food Handler will make all reasonable accommodations for testing provided at no cost to examinees with special medical needs covered under the Americans with Disabilities Act. All those who request must submit provide in writing, their needs, along with appropriate medical documentation. Please send all requests to: support@aaafoodhandler.com with “SPECIAL ACCOMMODATIONS” in the subject line no less than 5 business days before the scheduled exam date. We may submit the information regarding the stated disability and requested accommodation to our own expert advisers and reserve the right to provide only those reasonable accommodations as required by law.
Accommodations for Exam Language Translators
Currently, 1 AAA Food Handler does not allow for examinees to request translation services by language translators for remote proctored exams.
Exam Helper
Examinees will have the option to have someone help them with the onboarding and technical assistance prior to exam start. This option is intended to help those who need help with setting up the exam and connecting to a proctor. Once the exam is to start, the examinee must be alone. Exam helpers can be used in both online and in-person proctored environments.

Exam Information
The certification exam will be a 80-question multiple choice exam, with 5 of the questions being “experimental” questions. The “experimental” questions will be evaluated for use in future examinations and not counted towards the total score. The examinee will not know which questions are the “experimental” questions. Each question will have 2 distractors and 1 correct answer.
Upon a full exam analysis and cut-score study (modified Angoff), a passing score will be determined by the Advisory Team and a qualified psychometrician. Any score at or above the cut-score will be a passing score. Any score below the cut-score will be considered a failing score.
The examinee will be notified a passing or failing alert upon exam completion on their computer screen immediately after taking the certification exam. The actual numerical score will not be disclosed. Only a Pass or Fail result will be provided. If the result is a pass, then the examinee may download the certificate from the website from the dashboard. The examinee must be logged in with a self-made username and password.
If the result is a fail, examinees will receive information on their general deficiencies per knowledge categories on their computer screen immediately after taking the exam. The examinee will receive via email instructions on how to retest the exam.
If there is a problem with determining a result for the examinee after taking the exam, the examinee will be contacted either by email or call to notify the examinee of the delay. This notification will not be greater than 3 business days for the initial notification. If further investigation is needed, then the amount of time needed will be specified in the initial notification.
Blueprint of Exam
An examination blueprint that was derived from a valid job task analysis (with guidance from a qualified psychometrician) will be publicly available.
Food Manager Certification Exam Scheduling
Examinees will schedule their certification exam online on the 3rd-party online proctor’s website by choosing their desired date and time that is available. Currently, certification examination sessions must be made at least 72 hours in advance to not be charged an expedite fee. Any certification exams scheduled earlier than 72 hours out can be charged an expedite fee.
Food Manager Certification Exam Rescheduling
Examinees may reschedule their certification exam session without penalty if the change is made more than 24 hours ahead of the scheduled certification exam session.
Missed Certification Exam Policy
If an appointment is missed, then a penalty fee may be charged and the session is lost without refund.
Invalidating a Certification Certificate
If an examinee violates our Examinee Terms and Conditions and/or the Examination Rules (both are provided prior to an examinee taking the certification exam before, during, or after taking the certification exam), then the examinee’s certification and certificate will be invalidated.
Once a certification is invalidated, 1 AAA Food Handler will send an email correspondence to the individual in violation. The email will state that there is evidence of a violation(s) and that their certification will be invalidated. This correspondence would also give the individual an opportunity to explain or appeal the decision.
If an appeal is requested, then the appeals resolution procedure will be followed.
Validating a Certification Certificate
Anyone (ie. Employer, health inspector, public) can check to see if a certification certificate is valid. To make this request, an email must be sent to 1 AAA Food Handler regarding the validity of an individual’s certification certificate. The individual’s name and certificate number must be submitted and a response will be emailed back with either: YES-Valid or No-Invalid. An answer will be sent within 48 hours.
