This course has taught me how to identify foodborne illness, identify the relationship between foodborne illness, biological hazards, physical hazards, chemical hazards, cross contamination, identify the relationship between foodborne illness and personal hygiene, identify symptoms of foodborne illness and when it needs to be reported. I was able to understand the relationship between time and temperature to prevent foodborne illness. I understood the hazards of serving undercooked meat products. I was able to state required minimum cooking temperatures and times. Identify food allergens and symptoms associated with an allergic reaction. Understand the importance of dishes, equipment, and facility that is properly designed, constructed, installed, maintained, cleaned and sanitized. Identify Critical Control Points to prevent foodborne illness throughout the flow of food from receiving to serving.

Topics that were discussed went into clear detail about the subjects that followed. The information that was delivered was very straight forward. Along with that the quizzes in between subjects of the matter were very engaging and very helpful in confirming what I believed to be true or to help clarify if there was any misunderstanding of what was specifically being asked and required of you to remember.
